Working with a bouzouki player that grounds the project in the American immigrant past and the authenticity of Greek folk and a singer that bridges the gap between East and West, the Greek Cooking band recomposes the modal elements of the American \u201860s without the constraints of the studio recording process and the touristy ethnic clich\u00e9s characteristic of the era.
